  Aside from pineapples being highly nutritious, they are also economically-valued. The following is the introduction of processed pineapples products. We hope that it gives an insight into what pineapple is and how it sprocessed products, besides pineapple cake, are made.
Pineapple Vinegar
Ingredients: pineapples, sorghum vinegar, crystal sugar, and malt sugar
Methods: Peel and cut the pineapples into slices and keep them clean. Put the sliced pineapples into the glass jar that had been microwaved for 2 minutes for disinfection, and then add sorghum vinegar and an equivalent amount of malt sugar. Seal the jar and put it somewhere cool and ventilated. Open it one month later, and use a clean stirrer to stir the malt-sugar sediments and then reseal it. Four months later, your pineapple vinegar is done! (Bear in mind that it is better to drink pineapple vinegar after you dilute it with water, so it doesn’t hurt your stomach.)
Pineapple Jam
Ingredients: pineapples, lemons, brown sugar
Methods: First, peel the pineapples, get rid of the cores, cut them into slices, and then puree them with a blender. Add lemon juice and sugar into the pineapple puree and blend them well. Stir it while stewing it until the sugar melts, and then boil it over high heat until the pineapple puree is one third reduced and is darkened. Again, set it on low heat and stew it until it gets creamy. Put it in a glass jar that is heated and dried before it gets cold. Upend the jar. After it becomes cool, turn the jar back upright and s it at room temperature. And then, it is done!
Pineapple Enzyme
Ingredients: (1) 1 Kg of organic pineapple (It’s better if it has less pesticide residues.) (2) 500g of brown crystal sugar (or brown/dark brown sugar), with the proportion of one second pineapple (3) 50c.c pure rice vinegar
Methods: Wash the pineapple with filtered water (do not use tap water) and sterilize the glass jar. Dry them before cutting the pineapple that is not peeled into slices. Put the slices in the jar by the order of one layer of pineapple and then one layer of crystal sugar until the jar is 80 percent full. At last, add pure rice vinegar and top it but don’t snap the lid on or there will be bubbles inside. Stir it with sterilized or dry spoon for seven days. Pineapple enzyme is done when there is no more bubble and that approximately takes one month if it is in summer and three months in winter. It can be stored for one year if it is reserved in a cool place at room temperature. If it is diluted, it should be kept in the refrigerator.
Taiwanese Local Dried Pineapples
Ingredients: pineapples and sugar
Use low temperature to bake fresh pineapples for dozens of hours. The delicious taste of the pineapples will be completely and condensedly captured!
